Mom's Favorite Brunch Recipe


Hi Reader--

This weekend, we've been celebrating my mom's birthday with a family staycation here in San Diego 🥳

We've had pool time, card games, TV marathons, way too much Indian takeout, ping pong, absurdly delicious vegan cake from local San Diego bakery Hazel & Jade, and we even played darts (to everyone's surprise including my own, I am actually quite good).

While everyone else is napping off our enormous brunch, I snuck away into the bedroom for some quiet time and to write this email.

And in honor of my dear mom, who has never said no to a pancake (especially one drenched in maple syrup), I'm sharing my best-ever vegan pancakes today.

I know, I know. Vegan pancakes can be a tough sell.

Over the last eight years, I've had my fair share of limp, soggy, and/or dense vegan pancakes.

But a few years ago, I came up with this recipe for vegan pancakes, and they are truly out of this world.

We tested this recipe over three dozen times to get it just right (no exaggeration). The result is a pancake that checks every box: crispy golden brown edges, a mega-fluffy interior, and buttery flavor.

"Absolutely loved it! It has the perfect flavor and texture! The more the tofu marinates the better it becomes (I’ve kept it for more than a week). I’ve made greek arugula salad with it, a sandwich with tofu feta, argula, cherry tomatoes and whipped tahini and eaten it as it is as well! Thank you for this amazing recipe! I used firm tofu (since I didn’t have extra-firm) and pressed it for a few hours."
